Patricia Niven — 2019

A self-taught baker, Michelle began making bread at home for her family in North London before deciding to turn it into a business of her own. She opened the doors to Margot Bakery in East Finchley in February 2016 and has been feeding the local community delicious sourdough bread and pastries every day since.

Michelle went on to publish her first cookbook Modern Sourdough just a few years later in 2019. It features recipes not only for her trademark loaves of the good stuff, but it also takes us through sourdough pastry and other innovative ways to use a sourdough starter (think sourdough cheese scones).
