Kattan

Franco-Palestinian chef Fadi Kattan has made championing and sharing the joys of Palestinian cuisine his raison d’être. After 15 years working for the family business back home in Palestine, he returned to his passion — the kitchen — and opened his restaurant Fawda in 2016 with the aim of creating a space to honour Palestinian produce whilst giving traditional dishes a modern twist. In 2023, he co-founded his much-loved London restaurant Akub, bringing Palestinian flavours to the city’s Notting Hill neighbourhood in a beautiful, modern setting.

Fadi’s first cookbook, Bethlehem, published in 2024, is an ode to his land and his people, championing the producers, artisans and cuisine of one of the world’s richest cultures. Through his writing and his recipes, Fadi demonstrates so clearly how food is a humanising force, one that can keep knowledge, tradition and flavour alive. He shows that through our kneading hands at the kitchen counter and with each bite at the kitchen table, food can help us connect not only to ourselves but the world around us more deeply.
